When summer rolls around, we're always looking for a light lunch that isn't a salad. We love a simple open faced sandwich, or tartine, that highlights the best of summer produce, tomatoes! Paired with the zesty Better Than Everything Bagel Spice, this is the perfect lunch. It's packed with flavorful, juicy tomatoes, tangy labneh, and creamy avocado. Can’t find pea sprouts? Try arugula for an equally delicious dish!
Ingredients
- 3 teaspoons extra virgin olive oil, divided
- 1 slice sourdough bread
- 2 tablespoons labneh

2 teaspoons Oaktown Spice Shop Better Than Everything Bagel Spice, divided
- 2 to 3 slices heirloom tomato
- ¼ avocado, thinly sliced
- ¼ teaspoon lemon zest
- Pea sprouts
- Fresh parsley
Directions
- Heat 2 teaspoons of oil in a frying pan over medium-high heat. Add the bread, and toast on each side, until golden and crisp.
- In a small bowl, combine the labneh and 1 teaspoon Better Than Everything Bagel Spice.
- Spread the labneh on the toast. Top with tomato slices, and avocado. Add the lemon zest and remaining Better Than Everything Bagel Spice.
- Top with pea sprouts and fresh parsley. Enjoy!
Delicious and easy recipe to riff on. I used Greek yogurt in place of lebneh, and added a slide of bacon when available or an egg. The star is the spice mix which should be called the best Everything Bagel spice mix because it is! thanks for sharing!
