These delicious curry puffs are super fun to make and perfect as an appetizer. Think of everything you love about Japanese curry filled inside a crispy puff pastry. You won’t be able to stop at just one!
Preheat oven to 400°. Add neutral oil into pan on medium heat. Add carrots, let cook for until slightly softened. Add in onions, let cook for 1-2 minutes. Add in potato, let cook until softened but not mushy.
Add in ground beef, breaking up any large pieces. Add in salt, pepper, sugar, and curry powder. Let cook for a few minutes.
Sprinkle in flour and stir well for a minute.
Pour in chicken broth and mix everything together. Let cook until everything has softened and liquid has reduced slightly. Remove from heat and allow everything to cool.
Lay out frozen puff pastry and allow it to defrost (up to 20 minutes or until slightly softened). When ready, cut puff pastry into squares.
To assemble, add a scoop of filling in the center of puff pastry. Fold corner diagonally and press down edges. Using a fork, press down on edges to seal. Add egg wash to the top and sprinkle with sesame seeds.
Add puff pastries to a baking sheet lined with parchment paper. Bake for 10-12 minutes or until top is golden brown.
When ready, remove from oven and let rest before enjoying.
